We are  thrilled to announce our collaboration with Paz, chef Poul Andrias Ziska’s – former executive chef at KOKS –  new innovative restaurant set to open in Spring 2025 in Tórshavn, Faroe Islands. 

Reservations will be released tomorrow, 1st of March.

Founded by renowned chef Poul Andrias Ziska, Paz marks a new stage in his culinary journey, bringing him back to his roots after years of leading KOKS in the Faroe Islands and Greenland. His new venture focuses on Faroese food culture, sustainability, and deep storytelling through cuisine.

“Now, it’s time for a new chapter—one that brings me back to Tórshavn, where I was born and raised. I am thrilled to announce the opening of Paz, my very own restaurant in the capital. I am incredibly grateful for the journey, the people I’ve met, and the lessons I’ve learned during my 10+ years as executive chef at KOKS. The remoteness of the places where it has been located over the years—first in Kirkjubø, then Leynar in the Faroe Islands, and most recently in Greenland—has shaped me in ways I will cherish forever . These places have allowed me to explore the raw beauty of nature and push the boundaries of the culinary traditions and ingredients unique to each location.”

The multi-course tasting menu is a tribute to the land and sea that surrounds the restaurant, crafted with deep respect for local traditions and sustainability.

Right on the chef’s doorstep lies an abundance of some of the world’s finest seafood, harvested from the cold, pristine ocean surrounding our islands. These delicate ingredients are treated with care, allowing their natural flavours to shine.

Paz team also embraces the rich Faroese food culture, incorporating traditional methods like ræst—a unique fermentation process driven by the islands’ cool, salty air. These techniques create deep, layered flavours that pay homage to centuries-old practices while inspiring modern creations.
