IN SEPTEMBER, SANTO PALATO IN RESIDENCE BY RIOJA ARRIVES, THE GASTRONOMIC POP-UP THAT BRINGS CHEFS FROM ALL OVER THE WORLD TO MADRID, ORGANISED BY THE DOCa RIOJA

Rioja once again turns Madrid into an international gastronomic destination, bringing chef Sarah Cicolini’s Italian cuisine from Santo Palato to the city.

Madrid, 1 September 2025. On 17 September, in just two weeks’ time, chef Sarah Cicolini will arrive from Rome to take charge of Santo Palato In Residence by Rioja, as part of the eighth edition of the annual pop-up, organised by the Rioja Qualified Designation of Origin (DOCa) as the main partner, launched by the gastronomic consultancy Mateo&Co and promoted by Rioja. She will offer lunch and dinner services at the Semilla Food Studio in Madrid, located at 67 José Ortega y Gasset Street.

Sarah Cicolini will present her interpretation of contemporary trattoria cuisine, a tribute to the flavours of Roman and Abruzzo cuisine. The menu includes dishes such as: Anolini stuffed with roasted aubergine and ricotta, tarragon oil and tomato water, her famous Carbonara, fried brains with fish and a mixture of raw aromatic leaves, Macedonia with Abruzzo nougat and a Santo Palato-style Maritozzo. As in all sessions, the chef’s exclusive dishes will be carefully paired with excellent DOCa Rioja wines, which will further enhance the experience.

Born in 1988 in Abruzzo, the chef is one of the most important figures in the reinvention of Italian cuisine (recognised by Women In Food 2025, Italy). She opened Santo Palato eight years ago, a modern trattoria that quickly gained critical acclaim for its authentic and contemporary interpretation of classics, positioning itself as one of Italy’s trend-setting restaurants. The restaurant is included in the 50 Best Discovery list and revives and updates traditional recipes from central Italy. Cicolini’s cuisine is expressive, focused on the chef’s origins and based on the careful selection of raw ingredients and a zero-waste philosophy.

The New York Times wrote about her restaurant: «Cicolini does not force the evolution of classics from her small kitchen. Rather, her menu is quite traditional, and she knows how to extract intense flavours from the best local ingredients using simple techniques, a rarity among young chefs in Rome.»

Sarah Cicolini did not follow a traditional academic path to become a chef, but learned the culinary arts through experience, supported by the belief that cooking is, above all, an act of love and care for others. She previously worked in other prominent restaurants in Rome, including Metamorfosi – Roy Cáceres’ restaurant – where she met her current sous chef, Mattia Bazzurri, a Roman and yeast expert.

Rioja is once again making Madrid a world-class gastronomic destination in 2025, bringing together a selection of chefs from different corners of Europe, whose culinary creations can be enjoyed over five days, all paired with wines from the region. Thanks to their quality and diversity (reds, whites, rosés, sparkling wines, aged wines, etc.), they can be paired with such sophisticated and diverse culinary creations.

Santo Palato In Residence by Rioja thus joins the previous In Residence Sessions. Chef James Henry was responsible for kicking off the 2025 season in May, with his creations from his restaurant and modern farm Le Doyenné, located in the castle of Saint-Vrain, 41 kilometres south of Paris. In 2024, chefs from the restaurants Osip (Sommerset, UK), Kasama (Chicago) and Kadeau (Copenhagen, Denmark) joined the cycle with their gastronomic offerings. Other pop-ups brought Jakob Zeller and Ethel Hoon, head chefs at the legendary Faviken restaurant (Sweden) until its closure, to Madrid, as well as the world’s most renowned ramen offering from chef Ivan Orkin. and will make way for the Paz restaurant from the Faroe Islands, whose menu and wine pairings from the Rioja Qualified Designation of Origin will be announced shortly.
