ÁNGEL LEÓN RECEIVES THE GASTRONOMIC REVOLUTION AWARD AT THE ELLE GOURMET AWARDS 2025

The award was given in recognition of his unparalleled work in innovation and research in the culinary world linked to the marine universe.

  • The Elle Gourmet Awards celebrated their eleventh edition, recognising excellence in gastronomy, innovation and lifestyle.
  • The Gastronomic Revolution Award went to Ángel León for his unparalleled work in innovation and research in the gastronomic world linked to the marine universe.
  • On receiving the award, Ángel León said: «I always say that I am a marine psychopath, that I think about the sea all the time. And it is true that I am in a beautiful moment: Aponiente will soon fulfil a dream. The marshes that were in front of Aponiente, abandoned, are going to become a marine garden where we are going to harvest fish, grow seaweed and cultivate sea grains. And from next year, our customers will be able to be in the middle of a marsh, eating fish that we have looked after ourselves. So I look forward to seeing you all there”.
  • As well as being a meeting place for chefs, entrepreneurs, artists, fashion and cultural figures, the event celebrates the pleasure of sitting at a good table in the best company. Other notable figures of the night were: American singer Becky G., Hiba Abouk, chef Benito López, Cari Lapique and her daughter, Carla Goyanes (on behalf of the late Caritina Goyanes), Aitor Arregui, Mercedes Domecq and Ramón Freixa.
  • In past editions, this award has distinguished the work of great names in Spanish and international gastronomy such as: Massimo Bottura, Ferran Adrià, Mauro Colagreco, the Roca brothers, Dabiz Muñoz, Albert Adrià, Jordi Cruz, the chefs of Disfrutar, Jesús Sánchez, Franco Pepe and Martín Berasategui, among others.

Madrid, Wednesday 9 July – Sea chef Ángel León received the Gastronomic Revolution award at the eleventh edition of the Elle Gourmet Awards held last night at the Italian Embassy in Madrid. The award was given in recognition of his unparalleled work of innovation and research in the gastronomic world linked to the marine universe.

Presenting the award, Ramón Arangüena and Patricia Conde said: “Ángel León is a man who has forever changed the way we look at the seas and oceans, turning marine light into substance, plankton into bread and algae into culinary language”. On receiving the award, presented by the actor and director Paco León, the Aponiente chef thanked Elle Gourmet for the recognition and commented: “I always say that I am a marine psychopath, that I think about the sea all the time. And it is true that I am in a beautiful moment: Aponiente will soon fulfil a dream. The marshes in front of Aponiente, which were abandoned, are going to be converted into a marine garden where we are going to harvest fish, grow seaweed and cultivate sea grains. And from next year, our customers will be able to be in the middle of a marsh, eating fish that we have looked after ourselves. So I look forward to seeing you all there”. Other celebrities honoured yesterday included: American singer Becky G., Hiba Abouk, chef Benito López, journalist Estefanía Ruilope, Cari Lapique and her daughter, Carla Goyanes (on behalf of the late and much missed Caritina Goyanes), Palito, Lucía and Jara Dominguín, Aitor Arregui, Mercedes Domecq and Ramón Freixa.

Ángel León has a total of six MICHELIN stars, increasingly consolidating his position as a key figure in Spanish gastronomy. A benchmark in sustainability, the chef promotes the defence of the environment through gastronomy.

His Aponiente project (***MICHELIN + *Green MICHELIN) was recognised as the world’s most sustainable restaurant in 2022 by The World ‘s 50 Best Restaurants and is ranked #84 on this prestigious list. It also holds a Sustainable Sol Repsol. With his restaurant Alevante, located in the Palacio de Sancti Petri, Gran Meliá Hotel, he adds another two MICHELIN stars, plus two Soles Repsol. The chef also maintains La Taberna del Chef del Mar located in El Puerto de Santa María – in the same premises where he and his team cooked the first two MICHELIN Stars – distinguished with his first Sol Repsol in 2024.

The Aponiente restaurant is located in a former 19th century tide mill. In the heart of the Bahía de Cádiz Natural Park in El Puerto de Santa María. Led by chef Ángel León, Aponiente is not just a restaurant, but a project that seeks to reactivate and recover the surrounding environment, restoring and creating an ecosystem for future generations and re-establishing the natural balance, caring for the natural capital of the estuaries and marshes. Sustainable fishing and the use of species that have historically been considered discarded products are the hallmarks of the gastronomic proposal of the ‘chef of the sea’, together with innovation, creativity and honesty. For this he has been recognised worldwide as a Food Hero (FAO, the United Nations agency leading the international effort to end hunger), has received a special mention from the Basque Culinary World Prize for his transformative impact on gastronomy by exploring the possibilities of the ocean as a gastronomic larder, and has received in 2024 Three Knives of Excellence and the Science Prize, awarded by The Best Chef Awards.

Each year, the Elle Gourmet Awards recognise outstanding chefs from Spain and abroad, as well as new talents and professionals who make gastronomy an art.
