ÁNGEL LEÓN RETURNED TO MEXICO AND JOINED THE APAPAXOA FESTIVAL IN XCARET

This event, which celebrates Mexican cuisine and culture, brought together more than 50 renowned chefs in the Riviera Maya.

  • Ángel León returned to Mexico to share his philosophy and vision of the sea and its abundant resources at the Apapaxoa GastroCultural Festival Xcaret.
  • The event took place from 26 to 31 August and was proposed as a sensory ‘embrace’ between cultures, with more than 50 national and international chefs, as well as artists, writers and musicians who celebrated cuisine as identity, memory and collective creation.
  • The ‘chef of the sea’ joined other figures from the world of haute cuisine, such as Mitsuharu ‘Micha’ Tsumura, Antonio Bachour, Enrique Olvera, Roberto Solís, Santiago Lastra, Ana Karime López, Chele González, Andoni Luis Aduriz and Paco Méndez.
  • ‘Looking at the sea with hunger’ is the title of the talk that the chef from Aponiente shared with Spanish chef Paco Méndez from COME. The two also cooked together on the evening of 29 August.

Riviera Maya, 1 September 2025 – Chef Ángel León, also known as the ‘chef of the sea,’ has returned to Mexico to share his philosophy and vision of the sea and its abundant resources at the Apapaxoa Festival GastroCultural Xcaret, an event that aims to be a sensory embrace between cultures and was held from 26 to 31 August 2025 in Xcaret, Riviera Maya.

Apapaxoa, whose name means ‘embrace with the soul,’ is a multisensory experience that fuses gastronomy, art, mixology, music, and culture in iconic Grupo Xcaret venues such as Hotel Xcaret México, Hotel Xcaret Arte, La Casa de la Playa, and the Xcaret, Xplor, and Xenses parks.

As part of the programme, Ángel León joined more than 50 national and international chefs attending events such as ‘Relatos con sabor’ (Stories with flavour), intimate gatherings where chefs, sommeliers and writers share stories and knowledge; sensory mixology sessions on panoramic terraces; immersive experiences such as Xensaborium and bioluminescent fishing; as well as masterful dinners. Mitsuharu ‘Micha’ Tsumura, Antonio Bachour, Enrique Olvera, Roberto Solís, Santiago Lastra, Ana Karime López, Chele González, Andoni Luis Aduriz and Paco Méndez are some of the figures who participated in this cycle.

From El Puerto de Santa María, where the sea is the root, inspiration and creative force, Ángel León develops a cuisine that transcends borders and dialogues with other cultures, such as Mexican. At Xcaret, the chef of the sea not only shared his innovative vision of marine resources, but also a philosophy that celebrates the diversity of flavours, traditions and ecosystems.
